Six Easy Ways to Eat Spinach

Hi everyone! I hope your week has gotten off to a great start. Mine kicked off a little later than normal, and you probably just now read my “morning” post… if at all. Whoops.

Anywho, this afternoon I have something pretty simple I have been wanting to share with you for a while now, and it has everything to do with eating your greens. Any spinach fans out there?

I am sure a lot of you have heard the eat your spinach speech from many people throughout your life, and I must share that I used to be one of those who just brushed the concept off.

I mean, what if I don’t yearn to have those big Popeye arms?

You probably already know this, but the leafy green has an extremely high nutritional value and is very rich in antioxidants. Spinach is also a great source of iron and calcium, and the best way you can eat it is steamed or quickly boiled.

Keeping this in mind, I have put in an effort to get on board with it and throw it into my meals as much as I can. And you know what? Not only have I learned to tolerate it, I actually love and crave it.

Easy Ways to Eat (and love!) Spinach

(Not so new) Newsflash! You can make almost any meal effortlessly “better for you” with the addition of vegetables.

My experimenting started with throwing anything into scrambled eggs and smoothies, and over time I have come to learn that there are several ways to incorporate more greens into every day quick, impromptu meals.

Here are my favorites!

Lets begin with how my taste buds starting appreciating the green: on the stove top. Believe it or not, spinach actually tastes great in eggs.

If you are skeptical, start small by adding a tiny handful of it and mixing it with tomatoes and feta cheese. Or, you could always go Greek and add in some red peppers, onions and olives!

These days, I am prone to throw anything into my egg scramble, but spinach is almost guaranteed ingredient.

Three cheers for green smoothies!

I have to admit that I too was skeptical of adding the leafy green into my fruit smoothies. It just doesn’t seem to make sense, right?

Take it from me… it does, and is probably one of the easiest, less noticeable ways to start introducing spinach into your diet.

• power bowls

When I have no idea or motivation to create anything elaborate for lunch or dinner, I turn to power bowls. Basically, I throw a mixture of healthy carbs, veggies, and protein in a bowl with a little bit of cheese and hope it all tastes good together.

I love turning to containers of pre-cubed sweet potatoes or butternut squash to start with and steam those separately. Often times, I will also add quinoa or brown rice, and vegetables (which I also cook all separately).

I prefer to use ground turkey or chicken sausage, but if I am not feeling the addition of meat or tofu, I will substitute a half a can of black beans and/or chick peas instead.

The possibilities really are endless!

• monster-mix salads

Okay, this is an obvious one. But I wanted to include it for all of those lettuce, romaine and spring mix only eaters out there.

If you aren’t keen on using spinach as your base, try making a mix of it instead. While stocking up in the produce department, I always buy a variety in greens for a base. Sometimes I branch out with a container of power greens or kale, but most of the time I buy spring mix, romaine, and baby spinach all washed and ready to go.

Most of the time, I still wash the pre-washed greens, but that’s probably just because I am being dramatic. I promise that putting together monster salads really can be easy!

Similar to the power bowls, simply choose the veggies, protein, healthy carbs (if desired), and cheese that make sense together and you’re good to go.

All of these pictures are self explanatory… but hey, there was also a spinach flavored tortilla thrown in there as well. (An added bonus, in case you missed it.)

Disclaimer to anyone we invite over for dinner: I try to add anything to sauces without people noticing… especially spinach. A little extra greens never hurt anyone, right?

Since Scott loves spaghetti and pasta, I have learned different ways to enjoy it without it having to be labeled a “cheat” meal. The easiest move is to use spinach or veggie noodles.

On top of that, I like to get creative with my sauce and throw in fresh mushrooms, peppers, and spinach if we have it on hand.

If I am just not into cooking whatsoever, I will heat up a can of soup and it isn’t uncommon for me to throw a little fresh spinach in there as well.

 Maybe it is, but it tastes great to me!

On top of these easy ways to get you to eat spinach, they are also useful tips on how to use it once you buy it. I have to admit that I will often buy more than I need and instead of throwing it away when I think it might be turning, I throw it into a plastic bag and freeze it!

I will use this fresh frozen spinach for green smoothies, or even as an addition to sauces and soups just like I mentioned above. In fact, after scoping out the freezer food I have available, I sometimes get the inspiration to eat healthier and proceed to make something using it.

So you see? Spinach isn’t all that bad. I hope this post has helped inspire you to give it a try if you aren’t yet a fan!

WIAW #41: Quick, Balanced Meals

Happy Hump Day! In true Wednesday WIAW (or What I Ate Wednesday) fashion, today is all about the eats.

(Almost) every week, I go through a full day of my eating habits with you. The purpose is to give you ideas on how to incorporate easy, healthy meals into your busy schedules.

At times you will see a picture of pizza or a bowl of ice cream, and I truly believe that occasional indulgences are an important part of maintaining a healthy lifestyle. Knowing how to include those “cheat meals” is just a part of keeping that consistent balance, and these recaps display my attempts at doing just that.

What I Ate Wednesday Tuesday

I have had a relatively hard time getting up at a normal hour this week. I think the busyness of the NBA season is finally catching up to me! Anyways, I woke up a little later than normal yesterday and went directly into the kitchen for breakfast.

Keeping it easy, I quickly grabbed a Pineapple Greek yogurt and topped it with Bear Naked Berry Fit Granola and a sliced banana to enjoy alongside my large cup of coffee.

I was satisfied for a while, but found myself rummaging through the pantry about an hour later for a pre-lunch snack. Wheat Thin crackers and roasted red pepper hummus is what lured me in!

Feeling content, I made my way back downstairs to work on the computer for a while, only coming back up for a meal around 2 p.m. With our crazy game schedule this month, I haven’t been the most creative in the recipe department. I have, however, become pretty good at pulling easy, balanced meals together in a pinch.

That is exactly what happened here for lunch.

I have really fallen for quinoa over the past six months and wish I made it more often. When I am feeling lazy, I just pop one of those burgers in the toaster and it seems to do the job.

I also enjoyed a crunchy honey crisp apple!

I finished up my day at the computer around 5:30 p.m., which was just enough time to grab a snack before heading out to the gym. I wanted to make a green protein smoothie, but didn’t want to risk being late for Fitness Pilates class.

Instead, I filled a water bottle with a Mixed Berry Protein 2GO packet and ate a Chocolate Mint Zone Perfect Bar in the car.

I got my booty handed to me with another stellar class, led by my favorite Lifetime Fitness group fitness instructor, Val. How the woman can teach and demonstrate the entire hour while holding planks, killing push ups and shouting directions in a motivating, high-energy way is still beyond me!

I was glad to have the extra energy in my water bottle because a short series of treadmill sprints was next on the agenda.

I left a sweaty, sweaty mess!

Lucky for me, I live right down the road from the gym and made it home in ten minutes… HUNGRY. I found Scott digging into spaghetti leftovers, and used his extra sauce to start my own dinner.

Continuing on with my veggie pasta kick (<- did you see yesterday’s pasta salad recipe?) I boiled two servings of vegetable noodles and threw the rest of my steamed vegetables from lunch into the sauce. While the noodles were cooking, I also heated up one of my last Morning Star veggie burgers to add more substance. I topped it all off with more Parmesan cheese from lunch and in about ten minutes dinner was served.

With a goal to get to bed at a reasonable hour, I only caught half of the latest American Idol episode with Scott before getting in the shower.

Immediately after, I grabbed the same dessert you saw on last week’s WIAW.

So, so delicious!

The rest of the night entailed folding laundry, packing for tonight’s game, and straightening up odds and ends around the house. I have realized that even ten minutes of “cleaning” at night does wonders for my productivity in the mornings. It may just be me, but I get so much more accomplished when I wake up to a put together house.

All right. It’s time for me to get back to some projects and knock some things out before having to leave for the arena today. I am hoping to check back in with you later this afternoon!

Question of the Day

• Does the thought of straightening up before bed sound like a great or horrible idea to you?

I can see why some would think this idea is awful. I am sure that folding things and wiping counters isn’t exactly what most of you want to be doing before putting yourself to bed at night, but for me it helps me rest easier.

I love waking up to a clean house and part of my nightly routine lately has been making sure all of the laundry is folded, the living room is straightened up, and my coffee is set up to brew first thing in the morning. If I walk downstairs and I see piles, I end up spending most of the morning putting them away and tend to get on a cleaning kick that can last well into the afternoon.

Of course, this is not the greatest thing for someone who works at home.. but that’s just me!

WIAW #14: Back on Track

I felt on top of the world yesterday.

Not only did I have a few mini-celebrations on the blog front (I promise to share everything with you eventually!), but I finally got back on both the healthy eating AND snacking trains. Do you remember last week’s WIAW sensible snacking fail? Yeah… it happens, and it’s okay.

This week was time to get over that and back on track.

The difference of how my body feels after a few days of healthy eating is always evident. My mood is lifted, I have more energy, and my drive to be productive is through the roof. Coincidence? Eh… I think it’s just an obvious observation. Healthy food = fuel. Fuel = energy and motivation to have a great day. Great day = Happy Heather!

 Here’s What I Ate Wednesday Yesterday!

Breakfast

The coffee the size of my head is a given. You should know this by now… so actually snapping a photo of it only happens on rare occasions.

Wanting to get to work downstairs, I threw something extremely easy together to be on my way. I started with a serving of Chobani Low-fat Strawberry Banana Greek yogurt, then topped it with raw almonds, raw oats, chia seeds, and fresh blueberries.

Mid-Morning Snack

Before lunch, I had a slight hunger and tamed it with a sensible snack.

Sidenote: I am obsessed with hummus, specifically this Roasted Red Pepper flavor. Like, I want to marry it. Seriously.

Knowing lunch was right around the corner, I skipped the normal indulgence in Wheat Thins and grabbed a plate full of carrots instead.

Lunch

For lunch, I was pumped to try out a new Morning Star Farms product: the Mediterranean Chickpea Burger. *Swoon*

I just love chick peas. (<- possibly a direct correlation to my love for hummus?) The perfect way to test out a new veggie burger flavor is to heat it and put in on a monster salad.

This one included a fresh spinach/baby spring/romaine mix, broccoli slaw, grape tomatoes, cucumbers, black olives, red peppers, avocado, fresh cilantro, ground pepper, and a drizzle of balsamic vinegar + grapeseed oil.

I have enjoyed this same exact salad for two days and have a feeling it will make a third appearance this afternoon as soon as I publish this post. YUM!

Afternoon/Pre-Run Snack

I finished my work for the day around 5:30 p.m. and knew I would need some kind of substance in my belly before going for a run outside. My favorite go-to protein bar is any flavor of Zone Perfect Bars, but a close second has been Quest Nutrition Bars, depending on if I am in a chewy or soft bar kind of mood.

I got a very bright surprise in the mail yesterday! It was a pair of brand new running shoes from the Reebok One line, and they couldn’t have matched what I was already wearing any better.

Since the sun does not set until after 9 p.m. up here (crazy right?), I still had plenty of daylight to work with. When the day comes to run in the dark, however, I know exactly what shoes I will be grabbing. Watch out neighborhood… here I come in all my neon glory! (A review and more information on these shoes coming soon.)

Dinner

Five miles and a series of push-ups and plank holds later, I was one hungry girl. I already planned out dinner on my run (do any of you do that? ha), and started a pot of quinoa as soon as I walked back in the door.

I have recently become quite smitten by this whole grain, or seed… whatever you consider it to be. When it was almost ready, I quickly sauteed an Al Fresco Apple Chicken Sausage with red peppers, grape tomatoes and spinach.

I then made my quinoa bowl by starting with quinoa on bottom, adding the sausage and veggies, then topping it all off with feta cheese.

When my one serving was ready, Scott walked in the door and admitted to being a little jealous of my meal. He told me he was going to eat dinner at an event, so I didn’t feel the slightest bit guilty for eating it in front of him. Hehe.

Dessert

Even aboard the healthy train, I always allow myself a sweet treat after dinner. Ditching the ice cream, I pulled out something a little better for me this time.

With a glass of organic skim milk, I enjoyed a 100 calorie pack of Oreo Crisps. I even dunked each crisp in the milk like a five-year-old.

WIAW #13: Sensible Snacking Fail

Hey, Wednesday! Happy to see you.

Just the other night, Scott and I were talking about how girls label “things” as “people”… like days of the week, for example. This turned into him noting how he doesn’t understand the “That moment when….” statuses, and then went on to point out how we (<- women) are usually the ones who answer our own questions, even when no one is asking.

Back to WIAW! For the newbies: I now take part in What I Ate Wednesdays, hosted by Jenn over at Peas and Crayons. Each week I share a day of my eating habits, and explain the strategies of what I ate and why I ate it with with you!

Today’s eats are all over the place. I started out strong, missed a snack, then took quite the dive into s’mores at a bonfire last night. Whoops! Hey… it is summer. Regardless of the weather outside (which is completely ridiculous and obnoxiously fluctuating from hot to cold here), it is no time to slack on the workouts, but certainly a time to enjoy yourself every now and then.

What I Ate Wednesday - WIAW

Due to missing my morning snack completely, then having an afternoon snack that was… well… not the most fruit or vegetable filled, I went with including the original WIAW button you see above. June’s focus is on how to create healthy snacking, but I just don’t feel right labeling this post anything along the lines of “sensible snacking”. If you need a little more of that kind of inspiration, check it out here!

I have always wanted to be completely honest with you guys on the blog, prove I am not a robot who solely functions on carrot sticks and green smoothies (ha, that phrase still gets me, Tanya!) and share my healthy eating victories and struggles. Was this day of eating awful? No. It just was not up to my usual WIAW standards, so just know that.

Everybody has those kinds of days, and I think it is important for me to showcase it every once in a while.

Breakfast

Yesterday started off with the breakfast you might have already seen in yesterday’s post. Pretty solid.

I scrambled a few egg whites with mushrooms, green and red peppers, and a little bit of shredded cheddar cheese.

Since we have a copious amount of avocados still on hand (cue light bulb to make Quick + Healthy Guacamole today?) I sliced up some of one, and had half of a whole wheat English muffin smeared in peanut butter. Where is the other half? Oh… I actually fought the toaster to get the remains of that out.

Dangit Scott… you caught me again on the question thing.

Lunch

WIAW Fail #1: No mid-morning snack. Since my breakfast was a hearty one and I knew lunch would be just as filling, I decided to hold off and wait for my main meal.

I had just enough of my Turkey Sausage Skinny Pasta Pizzaiola (minus the peppers and onions) for lunch. I made this the night before our 5K this weekend, and enjoyed every last bite of it yesterday.

So simple! Start out with any kind of marinara sauce (I went with Newman’s Own Sockarooni Pasta Sauce), then add in your meat (I used Jennie-O Lean Ground Turkey), veggies (only mushrooms this time), and spices of choice. This time I grabbed the standards: oregano, red pepper flakes, a little garlic salt, then served it all over whole wheat linguini noodles. Delish!

I had a longer than usual day at the computer working on projects, then catching up on some blog related business on the back end. Mid-afternoon, I grabbed a can of FRS Healthy Energy to put a little pep in my step.

The low-cal Orange flavor was good, but not as great as the other flavors I have tried. (Stay tuned for a full review of these coming soon!)

Later on, Scott and I made a trip to the S.O.S. to finally renew the registration for both of our cars. I guess we are officially living here now, kids!

Oh, and in case you are wondering, “4REAL” is not my new license plate number. I made a sticker using the TypoInsta App on my iPhone to put over the real information. Did I trick anyone?

Right when we got home, Scott and I both practically inhaled one of our favorite snacks: chips and salsa. I have a serious addiction to these Garden of Eatin’ Blue Corn Chips and just paired it with a standard Tostito’s Medium Salsa.

With a little more work to do on the computer, Scott offered to take care of dinner (brownie points) and about a half an hour later I came back upstairs to something pretty special.

Considering I desperately need to make a trip to the grocery store today, I was quite impressed by what he pulled together. He called it the “Texas Turkey Mash-Up” and I have no idea where the name came from. It’s fine.

Basically, it consisted of a layering Zatarain’s Jambalaya Rice, then a MorningStar Farms Spicy Black Bean Burger, then Hormel Turkey Chili, all topped with shredded Monterey Jack cheese and sprinkles of fresh cilantro.

Sided with Alexia Spicy Sweet Potato Fries, this dinner rocked my world. It was really, really good… and I have to give him snaps for using the “lighter” versions of most ingredients.

Like I mentioned earlier, we finished the night off with a few sweet treats. We went over to a friend’s house for a small bonfire and s’mores, and that is exactly what took place!

Two of those, about four jumbo marshmallows on their own, and a few glasses of Pink Moscato went right down without any hesitation. (WIAW Fail #3?) Gotta love summer nights!

For what it’s worth, I am pretty sure I burned most of it off at the gym today. And… apparently I make my own rules this week.
